Christmas is ten days away? (!)

Where does the time go?

This week we’ve taken another step into the world of high-tech modernization—we’ve ordered groceries on-line.

We may be the last on the block to do so.

Having my ankle in a cast after a bad sprain, it finally sounded like a necessity. Plus there are so few days left for Christmas preparations amongst all the other things going on.

This is my bake-ahead day for Mrs. Bogle’s Strawberry Bread. I always make this for our Christmas weekend for early-risers and coffee drinkers before the breakfast crew arrives to cook for the whole bunch. (Each family chooses a meal to prepare.)                                                                                                                   The bread is wonderful, but also impressive is the star-shaped pans I bake them in.


List of ingredients calls for:

2 10-oz boxes     Frozen Strawberries, sugared &                                    sliced, thawed

I’m not finding this size any more. I ordered two 15.5 oz bags which were packaged differently than pictured on-line. I will make 1½ recipes. Wish I had another star-shaped pan.

4 eggs

1 ¼ cups salad oil

Dry ingredients in separate bowl.

3 cups flour

2 cups sugar

3 teaspoons cinnamon

1 teaspoon baking soda

1 teaspoon salt

1 cup chopped pecans

Preheat oven to 350 degrees (F). Grease and flour 2 loaf pans, set aside.

In small bowl stir strawberries, eggs and oil.

In large bowl, combine flour, sugar, cinnamon, baking soda, salt and nuts. Add strawberry mixture to dry ingredients. Stir until just blended.

Bake one hour or until toothpick inserted in center comes out clean.

Makes two loaves. Freezes well wrapped in foil.
